August 1st marks the official return of hare season – and with it, the opportunity to experience one of my favourite childhood meals. For those new to game meat, hare represents something special in British cuisine – a connection to culinary heritage, embodied most famously in the dish that was my introduction to serious game cooking: jugged hare.
As suppliers of wild British game, we're often asked about hare availability – particularly why it cannot be purchased at all, even frozen, between March and July. We also understand that hare can be one of our more controversial products, with customers sometimes expressing concerns about population sustainability.
For game lovers, the unique rich taste of hare is a delicacy. Fortunately for us in Suffolk, hare is abundant despite concerns about populations in the South-West and elsewhere in the UK. It’s a regular feature on our menus, thanks to our continuous supply – and we’d like to ensure it remains a taste everyone in the country can savour.
