The ultimate celebratory joint for a big party or Christmas!
After listening to our customer feedback we have refined our Party roast.
Made to order only, we bone out a goose, use chicken and pheasant fillets then combine them in layers with stuffing between each layer. There is choice of stuffings - a gluten free orange and thyme stuffing or a meat free orange, apricot and rosemary stuffing.
The bird combination is chosen for size; (pheasant fillets in the centre, then the chicken fillets and the goose on the outside) and colour (red meat, white meat and then red meat) so that you can see the contrast when serving. The fattier goose on the outside bastes the leaner fillets inside making cooking incredibly simple. We feel by using just fillets in the inner layers, this enhances our three bird roast. Its also very good cold, so don't worry if you can't manage it all at the first sitting.
Of course, as we make these to order, we are happy to use the whole boned birds as inner birds. You just need to make us aware by adding that instruction when placing your order.
