Wild Boar Roasting Joint

  • A family roast cut from the haunch (back leg)
  • Imported from Europe, hunted in its natural habitat for the genuine wild article
  • Available from 1kg up to 4kg, serving four to twenty
  • Allow around 200g per person
  • Very lean meat, best marinated and wrapped or larded to keep moist
  • A genuine alternative to traditional roast pork or beef

The roasting joint is cut from the haunch, or back leg, and is built for the centre of a Sunday or festive table. Wild boar is significantly leaner than farmed pork, so unlike a fatty pork roast this benefits from a little care to keep it moist: an overnight marinade with wine, juniper and rosemary works wonders, and a foil wrap or some streaky bacon laid over the top helps preserve every bit of juice.

The reward is a roast with a far more interesting flavour than anything from the farm, deep and savoury, that genuinely turns a Sunday lunch into an occasion. Available from 1kg, ideal for four, up to 4kg for a full festive table.

Marinate overnight if possible, then bring the joint up to room temperature.

Sear in a hot pan first for colour, then roast at 180°C / 160°C fan / Gas 4 wrapped in foil (or with streaky bacon laid over the top), allowing 40 minutes per kilogram, until the internal temperature reaches 63°C. Baste every 30 minutes and add a little wine or stock to the tin to keep things moist.

Rest, loosely covered with foil, for at least 10 minutes, or 10 minutes per kilogram for larger joints.

Do not overcook, as the very low fat content means it dries out quickly.

Frequently Asked Questions

Are your products supplied fresh or frozen? We often freeze our game so that we are able to supply seasonal meat all year round. Typically we thaw the meat for one to two days (depending on the weight/size of the product) in a 2ºC environment (for cutting and/or packing) prior to dispatch to you. Read more...

Can you tell me the ingredients of your stuffings and processed products? Yes, full ingredient lists are available. Read more

Do your products contain shot? All our meat in the game meat and game bird categories may contain some shot or shot fragments, as they are culled by hunters using shotguns or rifles. The only exception is squirrel, which is humanely trapped. In most cases the shot is not found in the meat, as shotgun pellets normally rest in the bone or the internal cavity and bullets usually travel right through the body. Shot is made from copper, steel, tungsten, bismuth or lead. For more information on the phasing out of lead, please read our blog.

How long will game meat keep for? All our products have a use by date on their packaging. In general products which contain minced meat (such as sausages and burgers) have a shelf life of 7 days whereas it will be 10 days from the date of packing for most other fresh meat. Depending on the courier and delivery schedules, the shelf life from the date of delivery for sausages/burgers will be 3/4 days, and 6/7 days for all other meats. Smoked products will have a shelf life of up to 21 days and most fish have a shelf life of 6 days (2/3 days from day of delivery depending on courier schedules).
