Wild boar trimmings are the unsung hero of the wild boar range, off-cuts from the leg, shoulder and flank that are tailor-made for mincing at home. The meat is leaner and darker than farmed pork, with the bold, deeply savoury flavour that comes from a life spent foraging on roots, acorns and forest vegetation on the Continent.

Pass it through a mincer for the wildest sausages or burgers you've ever made, shape into meatballs for a slow-simmered ragu, or chop more roughly for a homemade paté. A 1kg pack is a sensible weekend project; the 2.5kg pack is for the committed home butcher.

The trim will contain fat and sinew, making up at least 20% of the product. The amount of fat will vary according to the season as wild boar put on more weight in the summer, losing it in the winter. It also depends on the age of deer the culled by deer managers.

We are aware that many customers also use this product in raw food diets for their pets.
