Roast Sutton Hoo Drumsticks with Lemon, Garlic and Basil

Sometimes the simple things in life are the best and this mouthwatering recipe couldn’t be easier! Sutton Hoo chicken drumsticks are full of flavour so a squeeze of lemon juice, a clove of garlic, some butter and olive oil plus a little roughly torn basil are all you need to create this tasty meal.

Preparation

  • Cook time: 40 minutes
  • Serves: 4 people

Ingredients

  • 8 Sutton Hoo drumsticks
  • 2 whole lemons cut in half
  • 1 whole bulb garlic cut in half
  • 5tbsp olive oil
  • 1 large bunch fresh basil
  • Salt and pepper
  • 50 g butter

Instructions

  1. Pre heat oven to 200c. Place the drumsticks into a deep sided roasting tray.

  2. Pour in the olive oil and mix well ensuring you coat the drumsticks in the oil. Season each drumstick well with salt and pepper. Squeeze the juice of the lemon halves over the drumsticks then add the garlic and butter to the pan as well as the husks. Place in the oven and cook for 25 mins.

  3. Turn the drumsticks over and cook for a further 15 mins. Remove from the oven.

  4. Tear the basil over the chicken and toss all together. Place in the middle of the table and tuck in. Serve with crusty bread and eat with your fingers!
