Wood Fired Wood Pigeon

Get back to basics with this simple recipe for wood pigeon cooked on an open fire


  • Prep Time: 5 minutes
  • Cook time: 10 Minutes
  • Serves: 4 People



  1. Season the wood pigeon and set aside.
  2. Build a small fire with kindling, oak and woody rosemary stalks.
  3. Once the flame has left red hotembers cook the pigeon over the heat.
  4. Serve with the watercress and a little lemon oil.
